I highly recommend the Imperial Veterans pack, comes with a TIE defender and TIE bomber. One of the TIE defender pilots in that pack, Countess Ryad, has a very fun ability that allows her to change a 1-straight, 3-straight, or 5-straight move into a 180 move of the same distance.
Whisper, a TIE phantom pilot, is also a pretty fun one too. Boasts superb evasion and with the way cloaking works he can pretty much outmanuever anything that doesn't outrank him in pilot skill.
I have a friend who likes to play rebels and he swears by the Rebel Aces pack, gives you a b-wing that turns stress tokens into focus tokens; great stuff. And I have another friend who likes to play scum and swears by the Starviper since it can do some crazy moves itself.
If you're looking for something more "meta", you'll probably want to try and get as many TIE fighters as you can from blister packs or the Gozanti-class cruiser pack, as most tournament lists tend to run those for imperials. Rebels tend to field at least 1 Han Solo and a bunch of X-wings or similarly small fighters as well.
Meta or not, a lambda shuttle is also a good investment. Good attack potential and great support potential, making it a nice addition to some tournament lists. The ability for it to lock on to two ships ANYWHERE on the board then pass one of those lock-ons to another ship is sublime.
I've been playing for about 6 months now and have spent most of this year's paycheck on X-wing so I'd highly recommend focusing on some of those basic units before getting the bigger ones. A Han Solo pack, Boba Fett pack, and both of the Aces packs are a good buy.
