long story short – Israel requests Poland will either return jewish property that was stolen from them during the holocaust or pay reparations for said properties.

that's because many holocaust survivors also lost their property, homes and money after the holocaust. some discovered that a Polish family moved into their house, and refuse to let them in. and in some extreme cases there were bloody pogroms against holocaust survivors in Poland like this one : https://encyclopedia.ushmm.org/content/en/article/the-kielce-pogrom-a-blood-libel-massacre-of-holocaust-survivors

Poland outright refused and declared that if they would give any reparations it would be a "victory for hitler"

normally that sort of thing will make me angry at the Polesb but I feel there is more to it that is worth discussing.
for instance, the Polish refusal could be a reaction to some really nasty words by an Israeli minister that said "the Poles suckled their antisemitism from their mother's milk" which to this day he refused to apologize

also it could be possible that the Poles don't have any of the jewish property anymore because it was either stolen by the Nazis or confiscated by the communists.

that still leaves the issue with the jews who lost their houses. surely they deserve compensation for that right? so why is Poland so stubborn about this?

Bit late to the party, but apparently they did that back in 1960:

I didn't read the document in its entirety, but it seems like it invalidates any future reparations.
