I can't speak for every Nintendo franchise, but I know that for The Legend of Zelda, Miyamoto's philosophy is that by leaving out both voice acting and pre-rendered cutscenes, the story bits they do have are much easier to revise and rearrange in the event that levels and gameplay get heavily altered in the middle of development. Which is especially important when you consider that Miyamoto believes every asset of the game, from the story to the music to the setting, must have its roots primarily in the underlying gameplay above all else.
