Actually it's a little camera trick. Adjust the frame rate so that it matches up with the rotor's speed. That way every frame shows the rotors in the same location, but the helicopter still moves. Look at the tail rotor. It's moving at a different speed than the main rotor, so it still looks like it's turning normally.
