So… Pucci got at Jotaro's Stand, turned it into a Disc, then ran into the magic mirror, and then thought it'd be a good idea to give it to Sunset Shimmer? Okay, knowing how JoJo works, it's more like he probably dropped it or something, and she just found it and accidentally activated it.

But maybe she just has her own Star Platinum, like how Joseph Joestar's body gave DIO a Hermit Purple.
