Vulture and Mysterio never really had personal relations to Spider-Man in the first place so giving them that in the movies makes them more compelling (for movies) Spidey did. Vulture is Spider-Man's villain. His whole purpose is to just look like a hero just like the comics and Peter tries to destroy that and does.
