Not saying this is theory completely works, but she wasn't shot "in the heart" – she was shot in the sternum:

And shots to the chest with low-caliber bullets are survivable though tricky.

If (and I stress, IF) the teleportation theory is correct, all it would take is for Pyrrha to get proper medical attention when she arrived for her survival to be believable.
