Why risk losing thousands of men in a day when you can put like 300 in a castle? You force the enemy to either waste time and money in a siege or move on knowing those 300 men could come out and cause chaos behind your army's back.

Field battles are dangerous, armies expensive. Medieval field battles tended to only happen when one side could force the other into fighting in a bad spot.
