Replace 'are hiring' with 'will hire you' and you make it a little more accurate. I can think of plenty of jobs that I could do and would enjoy that are hiring in the purely theoretical sense.

Not just difficult but too difficult, meaning you won't be able to successfully complete the tasks and get fired as a result. Hence why they're always hiring.
