Outside of being temporarily 'resurfaced' due to Solar Sands's "Liminal Spaces (Exploring An Altered Reality)" video, this song has remained generally uncovered.
OP didn't specify anything in particular, but a few things come to mind:
70s Zambian rock music

(not sure just how underrated one may consider it, but it holds a special place in my heart as a sort of representative of flash games at their very best)

If we're gonna consider Yellow Magic Orchestra here, it's probably good that we also cite Rydeen. One of many other songs in the YMO catalogue that influenced the future 16-bit gaming era music a decade later.
Hell, we could share their first two albums while were at it:
Though I think it's worth pointing out that, though modern western audiences may perhaps not be acquainted with them, Yellow Magic Orchestra is still one of the most influential japanese bands not just in a localized national context, but in the broader electronic music genre in general. They are sometimes dubbed the "Japanese Kraftwerk", after all.

Yeah. I'm from the west and haven't personally heard a whole lot of discourse surrounding them, beyond being vaguely acquainted with some of their music. Figured they could use some more recognition, I do find myself enjoying their electronic music. The classification 'underrated gem' might have been used a little loosely here. They're only underrated where I live.
I think given the category this thread was created that OP meant media like film, tv, animation, videos, etc.

A flash animation from 2005.
It's not something that may be conventionally entertaining. Rather, I think there's something really wholesome and endearing of someone using flash back in 2005 to try to make something they felt was artistic, and in that sense it kinda actually touched me ngl. All the flaws and limitations that it has makes it only seems to increase it's charm factor for me. Maybe I'm just that soft, but I think it's worth sharing and checking out. I'd be happy if someone else also got out of it the same things I've managed to experience.

That was the shit in my childhood
I like to dunk on this game since it was one of the more mediocre FPS games I've played but Conduit 2 definitely is an Underrated Gem in terms of an FPS on the Wii. Game had some pretty good gunplay, the guns were unique. From an assault rifle that can turn you invisible to an alien thing that could shoot out angry alien bugs like an assault rifle to a damn gun that could shoot out blackholes.
