Ethnic characters are not a problem (I suppose unless there's some odd specific reason otherwise in a particular case, but that's rare), but the issue is: No matter what race you make them, you should make that character look like themself. Problem arises when they end up looking more like a random caricature than the established character many know and love, which seems to happen sadly often when dealing with certain humanizations.
