Mary Sues are pretty much an exclusively fanfiction thing for one. Second it’s established that Rey learned most of her skills through life on Jakku, like how to fight with a melee weapon and fly ships (she disassembled ships and sold their parts to a merchant who specialized in that stuff, it's not hard to take into account she learned of the inner workings and how ships work while doing this), and she knew of stuff about the Jedi through legends, something she didn’t believe until it became obvious the stories were true and the Force is a real thing, something she wouldn’t have guessed she had if not for Ren using his own Force abilities on her.

When she did the Mind Trick she was clearly only trying to see if it'd work based on what she knew from the legends, she didn't sound confident at all when she started using it and of course it didn't work at first on Mr. Daniel Stromtrooper Craig, but when she concentrated then it worked, and that was her confirmation "oh holy shit that mumbo jumbo is legit!"
