Ummm, Yang has a minor electra complex, so she subconsciously finds guys that look and act like her father attractive.
Yang likes having her way, and the least the guy fights back the better in her book, and Jaune can't do anything to Yang so Yang has complete control over Jaune, which is a good think for this ship.
And finally after Yang got disarmed, Jaune was the only guy in her hospital room when she woke up. Unintentionally cashing in on Yang's abandonment issues, by being there Yang subconsciously will remember Jaune as the guy that was next to her at her weakest moment making her trust him more then any other guy later on her life.
