Not every game needs an easy mode. Some games have naturally high skill bottoms, and balancing a game for the lower skilled player may make the game less satisfying for skilled players. For example, in Dead By Daylight, balancing for low skilled players lead to the Survivor team being vastly more powerful than the killer team overall. recent changes have fixed that, but making a game accessible sometimes comes at the cost of being bad.
As someone brought up, adding a new difficulty mode post launched is more work that the devs have to do. The original poster brushes this off, saying that all they need to do is tweak some numbers, but the issue is way more complicated then that.
Difficulty is so much more than damage and health numbers, there would be entire fight mechanics that would have to be changed and every enemy encounter would have to be tuned. All of that would have to be added to the budget. This is not a simple zero sum process.
That is not even getting getting into the fact that adding a story or narrative mode like this would conflict with FromSoft's traditional storytelling. The appeal of story in a FromSoft game is the difficulty and crypticness of the narrative. The story is not fed to you, you have to expend effort fighting secret bosses and discovering hidden secrets in order to further engage with the story. Of course if you just want to ignore the story and focus on the game, that is also an option. It is what makes Youtubers like VaatiVidya so popular.
