I'm latino and let me confirm that noone in my country says "latine" or "latinex" in my country at least some people (mostly politicians) just say something like "doctores y doctoras" for male and female doctors respectively. For me personally "latinex" and "latine" are like the hispanic equivalent of the n-word and i cringe and feel offended when someone uses them unironically. And also, i wish to point out that the RAE (Real Academia Española or Royal Spanish Academy) which is the highest authority on the lenguage considers UWU an actual word while none of these non gendered options are even used by normal people from any spanish speaking nation that i know of.
