In the Bible, fig trees often represent Israel. At this point in history, the Pharisees had control of the church, but they were corrupt and only desired glory for themselves, not God. When Jesus and the disciples, they expected to have fruit on it because fig trees produce fruit before leaves and the tree was already covered with leaves. When Jesus finds the tree devoid of fruit, it's representing the fact that Israel is not producing any fruit, aka it is spiritually dead thanks to the Pharisees. He curses the tree, causing it to die by the next day, to signify his impending judgement on Israel's "fruitlessness."
