Dragons in Elder Scrolls are inherently narcissistic megalomaniacs most of the time and can only be reasoned with by force, since they love the "might is right" mentality. Paarthurnax in contrast is a pacifistic guru who once taught early humans the way to overthrow their draconic overlords, though he used to be the right hand of Alduin, the most egotistic and cruel dragon of them all.
By renouncing his cruel ways and reforming into an altruistic teacher he has defeated his selfserving nature and made something of himself.
Worthy of mention is that he doesn't believe in good or evil, as he doesn't speak ill of all the antagonistic dragons. He just believe that there is a conflict of interest.
