The idea is that each day 'dies' when it passes. It becomes, for all intents and purposes, inaccessible to all except our memories, much like a deceased relative or friend. Unlike a person, days leave no 'corpse' behind, but otherwise, some people often treat lost lives and lost time with the same regard.
This then ties into the belief that we should appreciate each day that we have on the planet, simply because it is only given to us once.
