It depends on what kind of rice you're making and how much. One cup of rice (of the Uncle Ben's kind) and two and a quarter cups of water, you'd have the rice swell to potentially fifty percent more amount of area the water took up. Based on the pot, it looks to be well over ten or fifteen cups of rice used, but that's a very rough estimate.

That's also the reason why it's kinda prohibited to throw rice at weddings, seeing that the stomachs of birds could explode from the swelling of the rice inside.

I wonder what would happen if that was in a pressure cooker.
