Mine is the original Alien.
However, even though I was disappointed the sequel Aliens was more of an action movie, I still thought that one was pretty good too.
Herbert West Re-Animator, he's like Frankenstein if Frankenstein wasn't a puss.
The first one is a testament to low budget production, the third is Bruce Campell at his Bruciest, but the second is probably the best: a gory rendition of Tom & Jerry that predates Itchy & Scratchy.
Halloween and Alien have already been mentioned, so I'll also mention Silence of the Lambs, Scream, and Halloween: 20 Years Later (it's actually a legitimately good Halloween sequel, and Jamie Lee Curtis is a straight up badass in it)
On the guilty pleasure side, there's Jennifer's Body, Freddy vs Jason, and the 2009 Friday the 13th remake :V

Now I know it's not really a horror movie, but the first Mad Max scared the shit out of me the first time I saw it. It does a very good job building up tension and the outlaws are very convincing and terrifying. TBH the stuff that goes down in this movie is pretty horrific, so it's got the horror part down I guess

Full Stop. I still remember the day I decided to watch this movie out of it's legendary status, and was not only not disappointed, but also found one of my favorite movies ever, horror or otherwise.
