Not an OST, but it's the song for the title screen:
Captain Vespa

Snowman from the Mother series. I'm split between Mother 3 and Eathbound for my favorites.
Moonlight Butterfly/ Dark Sun Gwyndolin boss theme from Dark Souls
Oh man, I have a few:
Xenoblade has a phenomenal soundtrack, and this track is one of my favorites
In my opinion, the best water level theme in Mario history
Sonic CD has two soundtracks, And this is one of my favorites out of both of them.
I fucking LOVE this theme to death. One of my favorite pieces of music, and not just in video games, music in general. I've actually listened to it for about an hour strait once on loop, and didn't get sick of it. Unfortunately, I feel it gets overshadowed by jungle brinstar, which is also a great track.

!!
That theme is so cosy and chill, especially that brass instrument in the background.
The first ever song I found to be beautiful and relaxing dates back to some of my earliest gaming memories playing Donkey Kong Country's water levels. I would sometimes start the levels and pause just to hear that music.
Another great relaxing gaming song from my childhood was Earthworm Jim 2's Villi People. It's kind of cheating since it was just a 16-bit version of the first movement of Moonlight Sonata, but it's still really good.

This song stuck with me the first time I bought a Nintendo DS. Coming back to this song is like taking a trip down Memory Lane.
I really liked the music in Super Mario Galaxy. This song in particular feels so empty and calming.

As soon as I saw the title of this thread, I was going to say Corridors of Time, but you beat me to it.
One of my personal favourites from little less known games would probably be Endure and Resist from Eternal Sonata.
Off the top of my head:
when nemesis is on your ass this music makes you feel safe
This song came make me cry. It's just amazing. It's the calmest shit I've ever heard ever. It makes you rethink your entire life. 2deep4u

No Spyro 2?
@Slime Cap: Keep in mind that Enter the Dragonfly was the first Spyro game I ever owned, even the first GameCube game for me. Since my family wanted to keep on being a Nintendo family, we never got a PlayStation, and when I got this game I was excited since I was able to play a game in a series I've only had a glimpse of. So it's because of that is why that soundtrack is more familiar to me. I've only recently got a PS1 for myself just two years ago, and even though I've played the original trilogy on that, it's not enough compared to how much I've played Enter the Dragonfly.

Remember, even if it's an edutainment game, it's still a game.
Maplestory has so many good tracks I could flood this whole page, these two really stand out for me.
And a few other random ones: (Gwyn being my personal fav)
