Awnsers in order:
-Because the formula worked and you don't try to change what already works because you might end up breaking it.
-Because Nintendo got a childhood trauma, they got sued by Universal because of Donkey Kong and they won, then they saw that Universal lost the case because they were playing it loose with the King Kong IP and let anybody do their own takes, this lead to the court determinating that DK was distinct enough from KK to be considered fair use. Nintendo then swore blind they wouldn't let the same happen to any of their IPs.

After the massive success of the Family Guy Cinematic Universe (FGCU for short) and the success of Zack Snyder's South Park gritty reboot all shows and movies are trying to unsuccesfully copy Family Guy and South Park.

The Pew-die-Pie meets Family Guy movie had A LOT of n-words, like one every 5 minutes, it got old quickly

My main problem with the internet is that its often a constant cycle of people bullying, insulting, bossing around people with "mod" powers and making fun of each other but without the actual relative bravery of bullying someone straight to their face.
