Mapo Tofu is a meme that originated from the 2004 visual novel Fate/Stay Night. After Tohsaka Rin having invited you to talk at a local Chinese dinner in the Heaven's Feel route of the game, you are surprisingly greeted by the best girl in the series, being Kirei Kotomine, otherwise know as Yorokobe Shounen. He is seen enjoying a bowl of steaming hot mapo tofu, which is where this glorious image comes from.

The meme gained traction again upon the release of the game Fate/Grand Order in 2016. In a reference to the visual novel, "Extremely Spicy Mapo Tofu" is a junk Craft Essence that can appear when rolling the gacha to try to summon a useful character. The meme became well known enough that it was referenced in the opening to Fate/Grand Carnival shown here.
