There is no plausible or even remotely possible, they just have to look cool No one at Toho or Tsuburaya sits around asking, "What's the Evolutionary development that would logically lead to the creature we want to make? How big can it be before it would be too big to walk or even survive with the force of gravity and its own weight on its bone structure?" It's more like "Hey, how about we create a three-headed dragon with gold scales that can survive in space, that sounds pretty cool, right? Oh and make it the size of a skyscraper." The rule of cool is more important that scientific plausibility. I think that last line is really more what explains Kaiju. They're not animals that can be outwitted and conquered, they are primal forces of nature, humanity trapped at their whim
