But Go Off I Guess refers to a snowclone that grew popular on Tumblr in March of 2018 with the format "OP did (X), but go off I guess." The snowclone parodies a type of call-out post on the site in which a user will point out flaws with a particular poster or person that other people are enjoying and end their post sarcastically with "but go off I guess," a phrase made to feel others bad for enjoying the post or person. The snowclones tend to include fantastical references to pop culture or mythology.
Origin
The snowclone is a parody of a type of post popularly used on Tumblr and Twitter in which a person will point out flaws with a popular thing, then end their post with "but go off I guess," essentially sarcastically saying "whatever makes you happy" while voicing their clear distaste for the topic (examples shown below).
In February-March of 2018, the phrase began seeing use in parody posts on Tumblr. One of the earliest popular parody posts was posted February 25th, 2018 by user ladphobia.[1] It read "my friend keeps saying “chicken little is a lesbian but go off i guess” in Real Life and without being provoked, gaining over 25,000 notes (shown below).

In the following weeks, the parodies began becoming more popular on Tumblr. Popular examples include a post by luthoring[2] mocking Catholic history that stated "OP SIDED WITH POPE CLEMENT VII EVEN THOUGH KING HENRY VIII HAS THE DIVINE RIGHT BUT GO OFF I GUESS LMAO," gaining over 13,000 notes (shown below, left). Another post by user zolo[3] referencing Ratatouille gained over 54,000 notes (shown below, right)
